Ingredients:

  • ½ cup sliced cucumber
  • 1 cup chopped pineapple
  • ½ banana, frozen and ripe
  • ¼ cup light coconut milk
  • ½ cup filtered water
  • Zest and juice of 1 medium lime (around 1 tsp zest and 2 Tbsp juice)
  • 1 large handful of greens (spinach or kale, both work well)
  • 2-4 ice cubes (optional, depending on whether your pineapple is frozen)

Instructions:

  1. Add all the ingredients – cucumber, pineapple, banana, coconut milk, water, lime zest, lime juice, greens, and ice cubes – to your blender.
  2. Blend on high speed until the mixture is creamy and smooth, scraping down the sides as needed.
  3. Adjust the consistency to your preference. If you like it thicker, add more ice. For a thinner smoothie, add more water or coconut milk.
  4. Taste and personalize the flavour by adding more lime juice or zest for tanginess, banana or pineapple for sweetness, coconut milk for creaminess, or greens for a more intense green colour.
  5. Enjoy your delicious and healthy smoothie immediately! Leftovers can be stored in a covered container in the refrigerator for up to 24 hours, but be aware that fresh flavour and texture will be best.

  • If you don’t have coconut milk, you can use another plant-based milk like almond, soy, or oat milk.
  • For a protein boost, add a scoop of your favourite protein powder.
  • If you prefer a sweeter smoothie, you can add a little bit of honey or maple syrup.
